Muffins oh Muffins
"No good deed goes unpunished" couldn't have been screaming to me clearer as I wrote a note stating, "Hope these muffins brighten your day, thinking of you during this time," and then I heard a BANG! My almost 6 month old baby fell off our bed. I left her in the middle of our bed - FOR THE LAST TIME - as I quickly tried to write a short sympathy note.
Baby is fine - Doctor checked her out, no big bumps or anything, but we just need to keep an eye on her for 24 hours. I on the other hand am a little destroyed. Why, why, why did I leave her on the bed. I have gotten into very good habit of putting her in the crib or on the floor, if I have to step away for a second. It was a horrible decision that I will never absently minded make again and thank GOD the baby is okay. Baby is napping next to me as I type.
Anyway - back to the muffins. I made blueberry chocolate chip muffins yesterday because in the Midwest we make food for people who are going through a rough time and because I wanted to clean out part of our freezer before our CSA starts. So I googled best muffin recipe and found this: How to make the best muffins ever.
I followed the instructions and definitely liked the idea to soak the oaks in milk for an hour. This really made the muffins moist. I also liked that the recipe asked for a stick of butter - mmmm butter. I replaced the white chocolate with semi sweet chocolate chips because I'm just not a fan of white chocolate. The recipe really made some tasty muffins. They are not the sweetest muffins and I even sprinkled some brown sugar on top, but to have a base muffin recipe as simple as this, is pretty awesome. Since, I had extra ingredients I also doubled the batch and made 2 dozen. Why not, right? If you're going through all that effort why not make extra for yourself and your husband or partners office.
When baking it's really important that you do things quick, don't over stir and have your ingredients at room temp. It's also great to have an ice cream scoop on hand whenever you have to divide out the ingredient into balls, muffin tins or cupcakes.
Baking is supposed to be a fun and enjoyable task that can calm your nerves and warm some hearts. Even though I had a rough time before dropping off these muffins I'm still glad I took the time to make them.
AND I predict that muffins will be the next donut craze which is follows the cupcake craze.
So you better start practicing your muffin making.
