Krumkake Saga


Every Christmas for the past 19 years I leave Minnesota with my suitcase so filled with presents, food, odds and ends my mom has collected for the past 6 months and homemade treats, that I barely make it past check-in and security. One time they took my cheese spread...please don't ask for details, I might cry. I know exactly how much 50lbs is without a scale and I have the packing down to a science, but one thing I thought I also had down to a science was telling my mom "sorry mom, I don't have room for that glass bowl (unwanted antiques) that you really want to give away, but can't part with fully." Because this year she said "do you want one of my krumkake irons?" to which I guess I responded...no...no thank you I do not have room. 

Old Krumkake irons are cast iron and obviously weigh a ton, so maybe I quickly did the calculation in my head and knew that I didn't have that kind of poundage available in my luggage or maybe I just learned how to tune out the actual requests to avoid the guilt.  Either way, I said NO to a vintage krumkake iron that you cannot get on Amazon in two days when you decide you must make krumkake for your nordic winter supper club.

So I bought an aluminum krumkake iron on Amazon (very grateful to Nordic Ware) and will most likely give it to a friend, when I finally make room for one of my mom's 3 krumkake irons. UFFDA

All in all I still made krumkake, which means (and kind of literally) crumble cookie.  After about 10 failed attempts and re-cleaning the iron many times I finally greased it up properly (with oil, not butter) and got the cookie making going.  Below is my mom's recipe, however, I recommend making these with someone who knows what they are doing your first time around or at least watching a video.  I've made these plenty of times with my mom, but I still needed a refresh with a video and honestly more than anything I could have used the properly greased old timely krumkake iron.

Mix 4 eggs with 1 Cup of Sugar and vanilla (you know a dab)
Add in
5 Tablespoons of cream
3/4 Cup of Flour
2 Teaspoons of Cornstarch
1/2 Cup of Melted Butter

Definitely serve with fresh whipped cream!
