BBQ April - Mexican May - Picnic Suppers
I was able to make it to both Supper Clubs in April and May plus host mini Supper Club for Corrine's Supper Club 2. Jessee and Jesse out did themselves with an amazing Southern BBQ cuisine...um actually I should say girl Jessee out did herself because we learned that she cooked and baked everything (7 dishes plus dessert) for 16 people. However, boy Jesse watch Henry for 2 days so that's equally impressive.
Rachael on the other hand had, about 5 hours to prepare and host her supper club in May. She's constantly working, writing, producing shows and running. For a minute Alex and I, thought she had also ran the Brooklyn 1/2 marathon that morning...but supposedly she did not. Anyway she was able to make tortillas with steak (I think) and chicken, salsa, guacamole and 2 types of sangria, which she commented to me "oh you can have some." I'm pregnant. :)
My challenge for the outdoor mini supper club was to prepare everything with a 17month old (alex was working) and to get everything to the park without having any sort of panic attack. Even though it was totally exhausting, I really enjoy the challenge. There is something about cooking and organizing food that really keeps me calmed and zoned in. Océane may have missed her nap and our apartment was boiling hot, but I was still able to keep my cool.
Enough writing, because let's face it you just want to look at the pictures and maybe read a recipe or two.
In April - Jessee made Hush Puppies, Fried Pickels, Mac & Cheese, Pull Pork, Potato Salad, Cole Slaw, Deviled Eggs and Apple Pie (? I can't remember but it was delicious). Here are some pics.
Also in May - check out a pic from our CSC2 picnic. The dessert was my favorite part.
The dessert is a Strawberry Lemon Icebox Pie I saw them make on The Chew. Pretty good afternoon show, actually. Here is the recipe Strawberry Icebox Pie. I just bought some mason jars from The Container Store, which will be nice to have around for other frozen desserts and such. I also used less cream cheese than what the recipe called for (because I accidentally used it for something else) and I reduced the water a lot for the syrup. For the crust, I used organic oatmeal cookies from Whole Foods, but you could also just make a quick whole oat crust with butter and crust too. Yum Yum Yum. I was really glad to have made a few extra.
