The One-Armed Cook - Veggie Cakes


I got this recipe for Veggie Cakes from a mom in one of my mom groups - I have a few and you should too! I adjusted it a bit to make a larger batch and added a couple ingredients.

Ingredients
1 1/2 cups of Corn Muffin Mix (I used the Trader Joes mix)
6 Tablespoons of water
2 Tablespoons of canola oil, plus canola oil for frying
2 Egg whites
1 Cup of Beets (I used the Trader Joes, baby steamed beets - one package)
1 1/2 Cup of Shredded Zucchini
1/2 Cup of Shredded Carrots (buy pre-shredded, helps reduce prep time)

Mix the corn muffin mix, water, eggs and canola oil. Shred all vegetables and mix in with cornmeal mixture. Use a non-stick pan, heat oil in the pan and add about 1/2 cup of mix to pan for each cake. Reduce heat and watch cakes closely. When mix bubbles on top flip the cake.
